The Meatless Monday option is a nationwide trend. My sister's high school has the MM menu every week, and we live in South Dakota.
We always sell open cows. It's a late-bred cow that we will keep, with the hopes she'll make up ground the next year, or we can at least get one more calf out of her valuable genetics.
