“‘Twas the night before Christmas and all through the house, not a creature was stirring, not even a mouse.” While the poem, “The Night Before Christmas,” paints an idyllic scene of Christmas Eve, the reality is that, for most folks, the night before Christmas has you hustling to get things done before the relatives arrive. There are cookies to decorate, presents to wrap, potatoes to mash, and a succulent beef roast to prepare. If you’ve ever hosted a family gathering, you know what I’m talking about; a lot goes into preparing for the big day. Now that I’m older and have my own household to run, I can appreciate how hard my mom worked to make the holidays special for us kids.
Whether you’re busy getting ready for a family gathering or you’re out pushing snow and feeding cattle, chances are this is a busy time of year for a lot of you.
In honor of those who are staying up late tonight preparing that holiday meal for tomorrow, I thought I would share a couple of videos from the Texas Beef Council on how to prepare, slice and serve the perfect holiday beef roast.
