To celebrate May Beef Month, Roper Apparel is sponsoring two recipe contests featuring ground beef and sizzling steaks. Winners will take home $125 gift certificates for a new pair of boots!

From enchiladas to taco dip, we have compiled a tasty selection of ground beef recipes in the first two weeks of May. We are in full swing celebrating May Beef Month with Roper Apparel. Today, we announce the winner of our ground beef recipe contest and reveal the new cooking theme for the remaining weeks of May. The winning cooks will earn a $125 gift certificate for your efforts!

There’s nothing better than boots and beef, and we get both in this month’s recipe contest! We’ve been doing a lot of cooking trials at my house, and I’ve had hungry cowboys as my judges. After sifting through the many tasty entries, we were forced to pick a winner. Congratulations to Melanie Summers with her recipe Cowboy Baked Beans. Not only was the recipe cowboy-approved at my house, but it is simple to make and pairs well with summer staples like corn-on-the-cob, steaks and watermelon. Summers will take home $125 to be used on a new pair of boots, courtesy of Roper Apparel!

To round out the month, we are now opening up the recipe contest to sizzling summer grilling entries. Whether it’s a tri-tip, steak kabobs, ribeyes or short ribs, the sky is the limit. This is my favorite beef grilling recipe. It can be easily doubled and tripled to serve a crowd and everyone loves the flavors!

Bourbon Basted Beef Kababs

Spicy Bourbon Marinade:
1 cup soy sauce
1 cup bourbon
1/3 tablespoons brown sugar
2 teaspoons chili powder

Kabobs:
1 pound beef tri-tip cut into 1 1/2 inch cubes
2 medium sweet red peppers, cut into 1-in. pieces
1 medium green pepper, cut into 1-in. pieces
2 cups whole button mushrooms
1 medium onion, cut into wedges
Metal or wooden skewers

Mix marinade ingredients in a small bowl. In a resealable plastic bag or bowl, combine one half of the marinade, beef and vegetables. Seal bag or cover container; refrigerate for one hour or up to 24 hours.

Drain marinade and discard. Thread beef and vegetables alternately on skewers. Brush with reserved marinade.

Grill over medium heat for 15 to 20 minutes or until beef is medium rare and vegetables are crisp-tender, turning and basting frequently with reserved marinade.

Remove ingredients from skewers and serve immediately in toasted crusty rolls.

Makes 4 to 6 servings.
